Ingredients

    Ingredients:
    2 cup cooked quinoa
    2 cup cooked sweet potato
    4 tbsp milled flax seed
    1/4 cup bulgur wheat
    1 cup whole wheat flour
    1 cup brown sugar
    1/4 cup applesauce
    1 tbsp Pumpkin Pie spice
    1/4 tsp salt
    2 tsp baking soda
    1/2 tsp baking power
    2 eggs
    1 tsp vanilla

Directions

Mix all the wet ingredients together. Mix all the dry ingredients together, then add to the wet mixture. Drop into pre-sprayed muffin tins. I don't recommend paper cups, as they will stick to the muffins. Bake at 350F for approx 35-40minutes.
