Introduction

Ingredients

    10 cups homemade vegetable broth

    8 boneless, skinless chicken thighs, thawed and cut into bite sized chunks

    1 five cup bag frozen green beans

    2 tbsp fresh rosemary

    3 tbsp garlic powder

    3 tbsp onion powder


    Dumplings:
    3 cups white flour, 1 tbsp baking powder, 1 tbsp sugar, 2 tsp salt, 1/2 tsp black pepper, 1/4 cup egg whites, 1/4 cup canola oil, 1 cup nonfat evaporated milk

Directions

In a really large soup pot, boil the chicken in the vegetable broth, along with the seasonings and the green beans for about one hour.
After the soup has boiled for 45 minutes of that hour, in a large bowl, combine the dry ingredients for the dumplings with a fork. Add the wet ingredients in the center and pull the dry ingredients together so it is a tacky dough. Make 2" balls of the dough with your [clean] hands and drop them into the broth. You will need to stir fairly often. Once all the dough is in the broth, stir, and allow to cook for an additional 10-15 minutes, until the broth thickens. Serve immediately, and refrigerate any uneaten portion for up to 5 days.
