    1 pound lean ground beef
    1/2 cup chopped onion
    1 package Ortega Taco Seasoning Mix
    8 whole wheat large tortillas cut into 1 inch pieces
    1 can of tomato soup
    1 cup of salsa
    1/2 cup of skim milk
    1 15 oz can of black beans rinced
    1 2.5 oz can of sliced black olives
    1 cup frozen sweet corn
    2 cups of shredded fiesta blend cheese


Top with diced tomato and sour cream if desired (not included in calories)


In large skilled, brown ground beef with onion drain fat.
Stir in remaining ingredients (reserving 1 cup of the cheese) and heat through.
Pour into 9 x 12 baking dish that has been sprayed with oil.
Bake at 350 degrees for 30 - 45 minutes.
Top with remaining cheese and return to oven until cheese melts (about 5 minutes)

Serving Size: Makes 8 servings (1 8th of 9x13 pan)
