Ingredients

    1/2 c. chopped onion
    Half head small cabbage, cut into wedges
    15 baby carrots
    1 cup Hard Cider
    1 corned beef brisket, about 2.5 lbs.
    1/4 c. dark brown sugar, packed
    Juice from 1 orange
    2 Tbsp. whole grain dijon mustard

Directions

Place sliced onions, cabbage wedges, and carrots in the crockpot. Trim excess fat from corned beef and cut in half if necessary; place meat on the cabbage. In a bowl, combine the cider, brown sugar, orange juice & mustard. Pour over meat. Cover and cook on low-heat setting for 8 to 10 hours.
