Ingredients

2kg Ripe Seasonal Tomatoes
3 Medium size Onions
500g Seasonal Apples
1.5c White Sugar
2c Malt Vinegar
1tbsp Salt
1/2 tsp Cayenne Pepper
1 tsp Black Peppercorns
1 tsp Whole Allspice
2 tsp Whole Cloves
Directions
Wash and chop tomatoes.
Peel and chop onions.
Peel, core and chop apples.
Add all of the above as well as sugar, vinegar, salt, cayenne pepper in a preserving pot.
Tie peppercorns, allspice and cloves in muslin and add to pot.
Boil steadly for about 2 hours, or until completely pulpy. Discard whole spices.
You can either mash or put in a blender to desired consistency.
Also add cayenne pepper to your liking, I dont like spicy food so I only add approx 1/4 tsp.
Return to pot and boil for 2 mins. Pour into sterilised bottles and seal.
I dont put into sterilised bottles, instead I freeze it.
Makes roughy 1 litre.
