    1 lb sunchokes (or Jerusalem artichokes), scrubbed & rinsed, sliced into 1/4-inch thick slices
    4 tsp olive oil
    1/2 tsp kosher salt
    1/4 tsp freshly ground black pepper
    1 Tbsp chopped fresh rosemary
    8 cloves garlic, peeled and left whole


1. Preheat oven to 425.

2. Scrub the sunchokes under running water and slice 1/4 inch thick. In a medium bowl, mix the sunchokes, garlic cloves, olive oil, salt, pepper, and rosemary. Toss to combine.

3. Add the mixture to a roasting pan or baking sheet (I used a pyrex dish).

4. Bake for 20-25 minutes, until the sunchokes are tender.
