    2 TBS light sodium soy sauce
    3 tsp Greek seasoning
    c Lemon juice
    c olive oil
    4 Orange Roughy fillets
    Yellow Rice, prepared by direction on bag

    1 bunch of small, tender asparagus
    3 4 carrots , cut into julienne strips
    3-4 small yellow squash
    Dill Sauce to pour over cooked veggies at last minute
    1/4 stick butter or olive oil
    c lemon juice
    2 cloves of garlic, mashed
    1 TBS dried dill
    c parsley


Marinate fish for 3-6 hours in the above marinade and then grill on each side until done, or bake on a broiler pan in the oven. Serve on a bed of yellow rice. Side dish of steamed asparagus, carrots and after they have steamed for 5 minutes add sliced yellow squash. Melt 1/4 stick unsalted butter add 1/4 c lemon juice, 3 mashed cloves of garlic 1 TBS dried dill and 1/4 c parsley. Do not allow the veggies to set over night in this sauce -gets too strong.
