Number of Servings: 22


    1/2 cup almond meal (flour)
    1/2 cup potato flour (starch)
    1/2 cup coconut flour
    1 tsp xanthan gum
    1 tsp baking powder
    1 tsp baking soda
    1 tsp oregano
    1 tsp basil
    1 tbsp chives/minced green onions
    4 eggs
    1 tsp vinager
    1/2 cup almond milk
    1/2 cup shredded cheese
    1/2 cup shredded or chopped pepperoni


Preheat oven 350.
Sift dry ingredients together: almond flour, potato flour, coconut flour, xanthan gum, baking soda, baking powder, spices. Mix well. In separate bowl mix eggs, vinager, almond mix. Beat until combined. Dump all wet ingredients into dry. Stir until well combined. Fold in cheese and pepperoni until well distributed.
Drop by rounded tablespoon on cookie sheet. Bake 15 minute at 350 or until golden.
