    Pumpkin 1 can (400 ml)
    Milk 1 cup
    Buttermilk powder 6 tbsp
    Egg whites 3/4 cup
    Molasses 1/2 cup
    Sweetzfree 25 drops

    Oat bran 1 cup
    Wheat bran 1 cup

    Flour 2 cups
    Baking powder 2 tsp
    Baking soda 1 tsp
    Mixed spice 2 tsp (optional)

    Raisins 1 cup


Preheat oven to 400. Prepare muffin cups.

In mixer combine first six ingredients and beat well on low setting. Add brans and beat well on low setting. In medium bowl combine everything else except the raisins and mix well. On low speed add dry mix to wet mix and mix just until it's all incorporated, then add raisins and mix. Fill 12 muffin cups and bake for 20 min., or fill 2 cups and microwave for 5 min on power 3. Keep the rest of the dough covered in the fridge for up to 1 week, or freeze.

Serving Size: Makes 12 muffins
