Ingredients

    1 cup brown rice
    2 1/2 cups vegetable broth
    1/2 cup celery diced
    1/2 cup carrots, diced
    1/2 cup onions, diced
    1 tsp sea salt
    1 tbsp olive oil

Directions

In 2 quart stock pot heat olive oil on medium heat. Add celery, carrots, and onions. Saute until softened. Add rice and stir to coat in oil. Add broth and bring to a boil. Reduce heat and cover. Simmer for 30-35 mins until liquid is absorbed and rice is tender.
