2 oz deli sliced corned beef
    2 oz deli sliced pastrami
    1/c c onions diced
2 slices / oz reduced fat swiss cheese (sliced or shredded)
3 tbsp plain low fat / 0 fat greek yogurt
2 tbsp reduced fat thousand island dressing
    1/4 c canned sauerkraut

I also mixed in caraway seeds and topped with caraway seeds for more rueben flavor.

1. In a pan sprayed with nonstick coating, saute onions until lightly carmelized then add meat and continue sauteing.
2. Lay out slices of swiss cheese - cut to size of ramekin and tear left over edges into pieces. (I used shredded swiss cheese).
3. In a bowl, combine greek yogurt, dressing and diced/shredded cheese. Add hot meat & onion mixure and sauerkraut and stir.
4. Fill ramekins. (I used small ceramic baking dishes). Top with swill cheese disc (or with shredded swiss cheese).
5. Bake at 350 for about 10 minutes or until cheese is browned and melty.
