    5 oz baby spinach
    1 carrot, peeled
    1 tablespoon olive oil
    1 teaspoon fresh lemon juice
    teaspoon Dijon mustard


Serve with Eggplant Parmesean


Place spinach in a large bowl. Use a vegetable
peeler to shave thin strips of carrot into the bowl
with the spinach. Whisk together olive oil,
lemon juice and Dijon mustard. Pour dressing
over salad and toss well. Sprinkle with black
pepper to taste.
