Introduction
I tasted a great salad at Sweet Tomatoes and then later at our Farmer's store, I decided to mix a few ingredients of my own and try it at home. This is just a basic mix where you can had feta, goat or any crumbly cheese, fresh veggies and a light vinegar dressing to make a great salad. Ingredients

-4 to 4 1/4 C homemade or low sodium vegetable stock (I had made my own so I just used the nutrition of one online)
-1/2 C dried split peas
-1/2 C small whole green lentils
-1/4 C Organic Red Quinoa
Tips
You can dress this with feta, goat cheese or other crumbled cheese, black olives, tomatoes, bell peppers, onions of choice and some sort of vinegar dressing. These are ingredients I have seen at various places. These are not in the nutritional values.
Directions
---Combine all ingredients EXCEPT QUINOA in a med. to large pot covered but slightly vented. Bring to a boil and then reduce heat to simmer. Cook for about 25 min., stirring about every 5 minutes then add the Quinoa and stir again. Cook another 15-20 min. or until legumes are all tender. Let sit for 5 minutes.
---Drain and rinse well in fine strainer.
---Makes 6 servings of 1/2 C each.
