    1 tbsp olive oil
    1 medium onion, roughly chopped
    1 large carrot, chopped
    1 pound sweet potatoes, peeled and cut into 1-inch pieces
    2 medium Granny Smith apples, peeled, cored and cut into chunks
    3 cups low salt. fat-free chicken stock


Pre-heat oven to 400 degrees. Combine oil, onions, carrots, sweet potatoes and apples in a large bowl and stir well to coat. Remove from oven and place in a stock pot, followed by stock. Bring to a boil, then turn heat to low, cover and simmer for 10 minutes, until heated through. Use an immersion blender to purée until smooth. Serve.
