Olive Oil, .5 1tsp
*Lamb, Ground, 8 oz
Onions, raw, 1 medium (2-1/2" dia)
Garlic, 1 clove
Beans, white, 2 cans rinsed & drained
*Tomato products, Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano, 2 cans -7serving
*Dried Oregano, 1 tsp
Pepper, black, .25 tsp
Spinach, fresh, 3-6 cup
*President Fat Free Crumbled Feta, 2 oz
Added 2 cans of tomatoes &2cans of beans.. cups may be off but calories are correct... I also purred about 1/3rd of the bean/tomato/onion mixture before I added the lamb back..this was very good..wish I had more spinach...you can add 6 cups or a full 6oz bag or more
Add onion and garlic to same skillet; reduce heat to medium and cook, stirring frequently, until onion is softened, about 5 minutes.
Stir in beans, tomatoes and their juice, oregano, salt and pepper; bring to a simmer. Reduce heat to medium-low and simmer for 3 minutes for flavors to blend.
Add spinach to skillet; increase heat to medium and cook, tossing frequently, until spinach wilts, about 1 minute.
Stir in lamb; remove from heat and sprinkle with cheese. Yields about 1 1/2 cups lamb mixture and 1 tablespoon cheese per serving.
Serving Size: 4 servings abt 1 1/2 cup each
