Introduction

Ingredients

    1.5 bags of spinach - any kind, about a pound
    4 hard boiled eggs - sliced
    4 strips of bacon - precooked or not
    onion - thinly sliced, 1/4 cup
    sliced mushrooms - 1/2 cup

Directions

In a large bowl, good for tossing lots of stuff together, assemble spinach, mushrooms, hard boiled eggs, onion slices, bacon crumbles**

*If you are cooking bacon, drain all oil from the pan and leave on the burner to make the vinagrette.
If you have bacon already cooked, you can prepare the vinagrette in a saucepan.

In the pan, heat the oil up slightly, add S&P to taste and then add 2 TBS of the balsamic vinegar to the pan. It will sizzle a bit while you whisk - stand back. Take it off the burner while whisking and once it is emulsified, pour it over the enitre salad and toss immediately. Keep tossing until fully coated. If it looks a little dry, you can always add a little more vinegar to the salad itself.

Great with a crusty bread, or soup. If you are sharing between 2 people - this is your entire dinner - it is very filling!
