Ingredients

    3 stalks celery diced
    3 carrots diced or shredded
    2 onions diced
    1 tbsp olive oil
    1 red bell pepper diced
    10 oz package of mushrooms diced
    10 oz brick frozen spinach
    3 cloves garlic
    1/4 cup matzo meal
    3/4 cup liquid egg substitute
    Salt and Pepper to taste

Tips

Also enjoyable baked in muffin tins, just reduce cooking time.


Directions

In a large pan saute celery, carrots, onion in olive oil for 10 minutes. While that is cooking, defrost spinach and squeeze out water, set aside. Add bell pepper and mushrooms to pan, saute 5 minutes more. When vegetables are done cooking set aside to cool for 5 minutes. Preheat oven to 350, spray a 9x13 pan with cooking spray. Mix cooked vegetables, garlic, matzo meal, and egg substitute in a large bowl. Put in prepared 9x13 pan and bake for 50 minutes.
