    30g pistachios, finely ground
    2 cups "milk" (calculated for 45 calorie-per-serving almond milk)
    pinch of salt
    3/4 cup sugar
    2tsp cornstarch
    1tsp vegetable oil
    3 cardamom pods, lightly crushed
    1 tsp vanilla extract


1. Add 'milk', cornstarch, and salt to a pot and begin to raise to a simmer, whisking to stir in cornstarch.

2. Add ground pistachios (nearly powdered, not yet butter), oil, cardamom, and sugar; stir until smooth.

3. Once it simmers, remove from heat, strain through mesh strainer, and stir in vanilla. Cover and chill in the refrigerator 3-4 hours.

4. Prepare in ice cream maker as per manufacturer's instructions.

Serving Size: makes 16 ~1/4 cup servings (frozen)
