A unique twist on "mashed potatoes" A unique twist on "mashed potatoes"
Number of Servings: 3


    1. Half a head of cauliflower
    2. 3 oz baby carrots
    3. 1/4 cup of Greek Yogurt
    4. 1/2 cup of shredded cheddar cheese
    5. 1/4 cup of finely grated Parmesan cheese
    6. 1 tbsp garlic powder
    7. Splash of Almond milk or skim milk
    8. Salt and pepper to taste


Steam one half head of cauliflower and carrots for 20 min or until fork tender.
In food processor add cauliflower, carrots, shredded cheese, yogurt, garlic powder then blend until smooth. If you like smoother add a splash of skim milk or I used Silk Almond milk and it tasted just fine. Serve immediately.

Serving Size: Makes two cups of mash up
