Ingredients

4C Regular oatmeal
1C Shaved unsweetened coconut
1C Pecans, chopped
1C Craisins, chopped
1/2 tsp salt
1-1/2 tsp cinnamon
3T coconut oil, melted
2 Egg whites, beaten
1/3 C Maple syrup
1-1/2 tsp vanilla
Directions
Mix oats, coconut, pecans, Craisins, salt and cinnamon in a large bowl. mix the rest together in another bowl, then pour over oat mixture. Stir well. Spead on parchment lined baking sheet. Bake 325F for about 25 minutes. Let cool, then break up.
