    3 cup flour
    1 cup wheat flour
    1 tsp baking soda
    4 tsp baking powder
    2 tsp cinnamon
    1/2 tsp nutmeg
    1/2 tsp salt
    1 cup chopped walnuts
    1.5 cup mashed banana
    1.5 cup packed brown sugar
    2 eggs
    1 tsp vanilla extract (imitation)
    12 tbsp (3/4 cup) plain greek yogurt
    3/4 tbsp oil (canola)
    1/4 tbsp oil (canola)


Preheat oven to 375 F. In a large bowl, whisk together first 7 ingredients; stir in walnuts. In a separate bowl, mix together banana, brown sugar, eggs, vanilla, yogurt and 3/4 tbsp oil. Incorporate wet ingredients into dry ingredients, mix just til moist (do not over mix, should be lumpy). Using remaining oil, grease muffin pan (or use liners). Fill muffin pans. Bake approx. 18 minutes or until toothpick comes clean. Cool and store.
