This is delicious as a side dish for steaks or just to add to a mixed lettuce salad. This is delicious as a side dish for steaks or just to add to a mixed lettuce salad.
Number of Servings: 5


    5 Medium sweek bell peppers
    3 tbs balsamic vinegar
    3 tbs extra virgin olive oil
    1 tsp salt
    1 tsp black pepper


Put the bell peppers in the broiler on a cookie sheet, I cover it with aluminum foil. Check the peppers when they are turning black, just turn and let all sides to basically burn.

Take them out of the broiler and put them in a plastic bag, closed it and let them steam for about 15 mins. Then run them in cold water and take out all the black skin and seeds.

This will leave you with just the pulp of the peppers. Slice them in small strips.

Add all of the ingredients and you have a great side dish for a steak or to add to a crisp lettuce salad...
