    4 eggs
    2 cups "milk" (almond milk used here)
    nutmeg, freshly grated
    pinch of salt
    3 cups of frozen spinach
    3oz grape tomatoes, sliced
    2oz cheddar cheese, grated

    Bread crumbs for coating.


As these are 'crustless' quiches, you may wish to coat softer/moister sides of the cooked quiches with bread crumbs.

These quiches can be served hot, but also refrigerate well.


Preheat oven to 350F.

Combine eggs and 'milk'; whisk together. Add 1/4 to 1/2tsp grated nutmeg and a pinch of salt.

Spray a 12-muffin tin with non-stick spray.

Microwave spinach 1-2 minutes and drain water. Divide spinach, tomatoes, and cheese among the muffin cups. Then pour in egg-milk mixture (the 'royale').

Bake 20-25 minutes or until the tops begin to brown.

Remove quiches from the muffin tins to cool and dry.

Serving Size: makes 12 mini quiches
