    4 small-medium bell peppers, cut in half and seeded
    1 lb ground turkey (93/7 in this recipe)
    3 tsp olive oil, divided
    1 tsp ground cumin
    2 cloves garlic, minced
    1/2 tsp dried oregano
    3/4 cup sweet onion, chopped
    3/4 cup zucchini, chopped
    3/4 cup mushrooms, chopped
    1 large carrot, peeled and chopped
    1 cup fresh baby spinach, torn
    1 can diced tomatoes
    2 TBSP tomato paste
    3/4 cup low fat shredded cheese


1. Preheat the oven to 350F. Place the pepper halves cut-side down in a baking dish and bake for 15 minutes. Remove when finished and put to side.
2. While peppers are baking, heat 1 tsp oil in a large skillet over medium heat. Add turkey, cumin, garlic and oregano to pan and cook until meat is brown and cooked through. Remove and set aside.
3. Add 2 tsp oil to the pan with the vegetables and cook until tender (5-7 minutes). Add turkey mix back into the skillet and add tomatoes and paste.
4. Divide the turkey evenly into the peppers and place back in the oven for 12 minutes. Sprinkle the cheese on top and bake for another 3 minutes.

Serving Size: Makes 8 servings (1/2 pepper)
