    2 3/4 cup lukewarm water
    1 1/2 Tbsp granulated yeast ( 2 packages)
    1 1 /2 Tbsp Kosher salt
    1 Tbsp sugar
    1/4 cup olive oil
    6 1/2 cups flour

    1 Tbsp olive oil
    1/2 cup chopped onion
    3 cups chopped red, yellow & orange peppers
    1/2 cup salsa
    2 cups (8 oz) shredded pepper jack cheese
    1 1/2 cups shredded chicken


this is a great crispy crust- more of a flat bread


in stand mixer with dough hook add yeast, salt & sugar to water and mix. Mix in flour without kneading. After all of the flour is mixed in transfer to a 5 qt bowl, cover but do not seal. Let dough rest for 2 hours. it can be used after 2 hours but works good to put in frig.
Using about 14 oz of dough, roll out on a greased 15x10 jelly roll pan, bake for 8 minutes.
Saute onion in 1 Tbsp of olive oil for 2 min. add the peppers and cook for 5 min., stir salsa. Place on top of baked crust and add chicken and top with cheese, bake an additional 10-15 minutes.

Serving Size: makes 15x10inch jelly pan cut into 24 pieces
