    1 c. old fashioned oatmeal, ground into oat flour**
    2 small bananas (6oz)
    2 tbsp. PB2 powder (peanut flour)
    1/2 tsp baking soda
    1 tsp vanilla
    2 tbsp sugar free sweeter(truvia, stevia) optional

    **put the dry oatmeal in a food processor or blender and blend until oatmeal resembles flour.


Preheat oven to 350 degrees. Line a baking sheet with parchment paper.

In a blender or food processor, add oat flour, PB2, baking soda,sweetener (if using), bananas, and vanilla. Process until thoroughly blended and smooth.

Use a small scoop or spoon to drop batter onto lined baking sheet, about two tablespoons of batter per cookie.

Bake for 15-17 minutes, or until cookies are set. Remove from the oven and allow to rest on baking sheet for 10 minutes. Transfer to a wire rack to cool completely.

Store leftovers in an airtight container in the fridge.
