    8 oz lean ham, cut in small pieces (or lean sausage)
    2 1/2 cups frozen hash brown potatoes
    1 can chopped green chiles, undrained
    1 1/2 cups shredded Cold-Jack cheese
    4 eggs
    3/4 cup milk
    1/2 cup La Vistoria Thick N Chunky medium salsa


Left over mashed potatoes can be substituted for hash brown potatoes.
You can bake this dish right away if you like.


Spray 8 x 8 glass baking dish with cooking spray. Cook ham or sausage over medium heat 8 to 10 minutes, stirring occasionally.
Spread frozen potatoes in baking dish. Sprinkle with ham or sausage, green chiles and 1/2 of the cheese.
In a medium bowl, beat eggs and milk with a fork or wire whisk until well blended. Pour over potato mixture. Sprinkle with remaining half of cheese. Cover and refrigerate at least 8 ours but no longer than 12 hours.
Heat oven to 350. Bake uncovered 35 to 40 minutes or until knife inserted near center comes out clean. Let stand 10 minutes before cutting
Serve with salsa
