    1 cup enchilada sauce
    6 corn tortillas
    1 cup fat-free refried beans
    2 cups spinach
    6 black olives, sliced


I sometimes add some salsa in the layers and add lettuce and tomato and sometimes chopped green onions for garnish.


Spread a thin layer of enchilada sauce in a microwave or oven safe dish. Next, add a layer of tortillas, covering the bottom - a little overlap is fine. Spread tortillas with half of the refried beans and top with half of the spinach. Add another layer of tortillas with remaining beans and spinach. Top with remaining torgillas and pour remaining enchilada sauce evenly over everything. Microwave or bake until warm, then add olives on top before eating.
