    Chicken Breast
    Sundried Tomatoes
    Laughing Cow Lite Swiss wedge
    Olive oil
    Low salt/fat chicken broth


Double as needed.


Heat Olive oil in saute pan.
Add sliced Shallot
While shallot is sauting, pound chicken breast.
sprinkle with Salt, Pepper, Paprika, Basil.
Spread 1 wedge of Lauging Cow
Top with Spinache and chopped Sundrieds
Roll and toothpick tightly.
Sautee all sides to ligh brown.
Add chicken broth cover and simmer.
Drizzle broth over breast when serving and use remaining over whole wheat pasta.
Served with Green beans, red pepper, onion saute
Whole grain rotini and leftover broth :)

Serving Size: 1 LARGE chicken Breast-can be split
