    5 oz baby spinach
    1 pear, sliced
    small red onion, thinly sliced
    2 tablespoons olive oil, divided
    1 tablespoon red wine vinegar
    1 teaspoon Dijon mustard
    teaspoon pepper
    2 oz goat cheese, cut into -inch-thick slices


Serve with Roasted Tomato Garlic Soup with Basil


In a large bowl, combine spinach, pear and
onion. In a small bowl, whisk together 1
tablespoons olive oil, vinegar and mustard.
Pour over salad ingredients and toss. Season
with salt and pepper. Heat remaining
tablespoon olive oil in a nonstick pan over
medium heat. Place goat cheese in pan and
brown on each side for 20-30 seconds. Serve
warm goat cheese over salad.
