Easy healthy quiche, great to freeze and have throughout the week. Easy healthy quiche, great to freeze and have throughout the week.
Number of Servings: 12


    1 15 oz carton Southwest Egg Beaters
    4 eggs - beat the eggs
    1 - 12 oz pkg 2% Shredded Mexican Cheese
    1 box frozen Chopped Spinach - drained
    1 tsp sea salt
    1 tsp Cummin
    1/2 tsp pepper


Freezes well. 2 WW+ points


Combine Southwest Egg Beaters and 4 eggs (beaten) with cheese. Thaw & drain the spinach. (squeeze box/drain then put spinach between paper towels & squeeze, repeating this process several times changing paper towels till all liquid is squeezed out). Add spinach and spices to bowl and mix well. Spray w/Pam and fill a 12 hole muffin pan. Bake @ 350 for 20-25 minutes or until knife comes out clean when stuck into Quiche.
