Ingredients



    *Whole Wheat Flour, 1/2 cup
    *Flour, white, 1 cup
    Granulated Sugar, 1 1/4 cup
    Baking Soda, 2 tsp
    Cinnamon, ground, 2 tsp
    Salt, 1/4 tsp
    Carrots, raw, 2 cup, grated
    Raisins,1/2 cup (not packed)
    Walnuts,1/4 cup, chopped
    Apple, peeled,chopped
    3 Eggs
    Applesauce, sweetened, 1 cup
    Vanilla Extract, 2 tsp

Directions

Mix dry ingredients in a large bowl.Mix together all fruits, veggies, and nuts in another bowl. Mix eggs, applesauce and vanilla together and add to dry ingredients. Mix in fruit mixture. Spray or line muffin tins, and place mix to fill cups. Bake @ 350 degrees for 12-15min, until done.
