Wonderful Saturday morning breakfast food! Wonderful Saturday morning breakfast food!
Number of Servings: 2


    3/4 cup egg beaters
    1 egg white
    1 oz 2% milk
    5 slices of bacon, cooked well & chopped
    3/4 cup Kroger Recipe Beginnings Mirepoix Blend
    Pam Cooking Spray
    Pepper to taste
    1/4 cup Kraft Mexican Blend 2% Shredded Cheese


I served this over toasted Lender's Onion bagels, it was delicious! If you want more of a "south of the border" flavor, add a little salsa or hot sauce.


Heat skillet over medium heat.
Spray Pam in skillet, add bacon & Recipe Beginnings, saute for a minute or two.
Meanwhile whisk together egg beaters, egg white & milk.
Add egg mixture to skillet.
Cook for 3-4 minutes, stirring occasionally, until eggs are cooked through.
Divide onto two plates, sprinkle shredded cheese overtop.

Serving Size: Makes 2 servings
