    2 lbs any small potato (e.g. red potatoes, baby Yukon potatoes or fingerling potatoes)
    2 tbsp olive oil
    1 tsp Kosher salt


Put the potatoes in large saucepan (preferably in one layer) and cover with a least an inch of water. (Add a little salt to the water if desired). Bring the water to a boil over high heat, reduce to a simmer and cook the potatoes until they are completely tender and can be easily pierced. Drain and put back in the saucepan to cool.

Preheat oven to 450 degrees.

When the potatoes are cool enough to handle, add the olive oil and Kosher salt. Shake the saucepan (use a lid if you have one) until the potatoes are evenly covered in oil and salt. Add a little oil if the potatoes are too dry.

Place a piece of aluminum foil at the bottom of a cookie sheet. Transfer the oiled potatoes to the cookie sheet. Carefully smash down each potato to a thickness of about half an inch. This does not have to be pretty. The skins will break and some of the potatoes will fall apart. Don't worry about it.

Bake at 450 degrees for 35 to 45 minutes depending on how crunchy you want your potatoes. Makes about 6 servings.
