    2 cans shoepeg corn
    2 TBS lemon juice
    1 tsp kosher salt
    1/4 tsp black pepper
    3 TBS olive oil
    3/4 container of grape tomatoes, halved
    1/2 cup diced red onions
    1/4 cup fresh basil, torn into little pieces


Drain corn & blend with tomatoes & onion.
Mix dressing together (lemon juice, salt, pepper, olive oil) & mix well with corn mixture.
You can prepare a few hours ahead, refrigerate, and add basil just before serving

Serving Size: makes 8 1/2 cup servings
