    1 TBS garlic powder
    1 cup uncooked quick-cooking grits
    1/3 cup finely chopped red onion
    5 TBS butter, divided
    2 large eggs
    1 10 oz pkg chopped spinach, thawed & drained
    1 1/2 cup grated Parmesan cheese
    1/2 cup creamy Ceasar dressing
    1/2 tsp pepper
    1 1/4 cup coarsely crushed garlic-flavored croutons


Can make ahead up to 2 days prior and just add the buttered crushed croutons, just before baking.


Preheat oven to 350. Bring garlic powder & 4 cups water to boil in large saucepan over med-high heat. Gradually stir in grits. Reduce heat to medium, and cook, stirring often, 5 minutes or until thickened. remove from heat and stir in onion and 3 TBS butter.
Whisk together eggs, and next 4 ingredients in large bowl. Gradually stir in the grits. Pour into lightly greased 13x9 baking dish. Melt 2 TBS butter and toss with crushed crutons. Sprinkle this mixture over grits. Bake 350 for 30-35 min or until mixture is set and croutons are golden brown.
