    Corn Meal, Bob's Red Mill Medium Grind, 1 cup
    Whole Wheat Pastry Flour, 1 cup
    Salt, .5 tsp
    Baking Powder, 4 tsp
    Granulated Sugar, 3 tsp
    Egg, fresh, 1 large
    Skim Milk, 1 cup
    Butter, salted, .25 cup


These have a really nice crust, but it seemed a little too salty to me with both salt and salted butter. Next time I'll just use the salted butter.


Sift dry ingredients together.
Add wet ingredients.
Beat until smooth, about 1 minute - do not overbeat.
Bake in greased 8x8 pan for 20-25 minutes at 425 degrees.

Or, for 12 muffins, bake at 400 for 15-20 minutes
