Ingredients

Fruit Topping:
2 kiwis
1 c. sliced strawberries
1 c. blueberries
Crust:
1 c. whole rolled oats
1/8 c. almonds
1/8 c. pecans
1 Tbsp coconut oil
1 pinch salt
8 Tbsp ice cold water
Custard:
2 cups Vanilla Greek Yogurt
½ oz Tbsp lemon juice
¼ cup whipped cream
1 Tbsp honey
Directions
Slice fruit and set aside.
In a food processor, coarsely mix oats, almonds, pecans, oil, salt, and water. Press into a pie pan. Prebake for 10 minutes at 350 degrees.
To make filling, combine yogurt, lemon, whipped cream, and honey. Chill for at least 15 minutes in the fridge.
Pour filling into crust and chill. Top with fresh fruit before serving. Serves 8 wedges.
