Ingredients

    1 large Onion finely chopped
    1 Celery stalk finely chopped
    1 Carrots finely chopped
    1 clove garlic
    1/2 cup dill pickle juice
    4 cups chicken broth
    1/2 cup mined dill pickle
    3 cups diced potato
    1 tbsp dried dill (or 2 tbsp fresh)

    Bechamel
    1/4 cup margarine
    1/4 cup flour
    3/4 cup Milk,


Directions

Heat olive oil in pot. Over medium heat soften vegetables(not potato). (about 15 minutes)
Deglaze with pickle juice
Add Chicken broth and dill pickles
Boil covered, reduce heat and simmer 30 minutes
Add potatoes, boil until tender
Remove from heat and add bechamel
Enjoy! :)
