    1/2 cup Old Fashioned Quaker Oatmeal
    1/2 cup Cottage Cheese, Nonfat
    1/2 cup Egg Beaters, original
    1/2 tsp baking powder
    1/2 tsp vanilla
    1 pkg Truvia

    Cinnamon if desired.


They last well in the fridge. I keep a few on hand for quick healthy snacking. They are very good cold. Just spread with a little nut butter and/or honey.


Blend everything except the oatmeal until you have a smooth liquid. Add oatmeal and blend just a bit. The batter will be a little lumpy. Let sit a couple minutes to thicken.

Pour into a hot oiled skillet. Flip. Eat :-)
