Introduction

Number of Servings: 4

Ingredients

    2 cups skim milk
    1/4 cup flour
    1 can low sodium Chicken broth
    2 tsp Mrs. Dash Herb & Garlic Blend
    1 bunch broccoli
    1 cup reduced fat Cheddar cheese, shredded

Tips

Can use different thickener for gluten-free soup
Can add more broccoli for those that love broccoli
Can blend soup for a less chunky texture


Directions

Take the broccoli and remove florets. Chop into small pieces. Take the remaining stem and slice off the thick outer skin and chop remaining stalk into small pieces.
In a quart sized pot, blend milk and flour. Turn on element to medium and add chicken broth, stem pieces of broccoli, and Mrs. Dash. Cook on medium heat, stirring constantly, until thickened. Remove from heat and add remaining broccoli pieces and shredded cheese. Stir until cheese is incorporated.

Serving Size: Makes 4 servings of apx. 2 cups per serving (varies depending on amount of broccoli)
