    1 Turkey Carcas
    1.5 gallons water
    Carrots, raw, 3 cup, chopped
    Onions, raw, 1 cup, chopped
    Celery, raw, 2 cup, diced
    Hunts Crushed Tomatoes, 28 oz can
    Mushrooms, fresh, 2 cup, slices
    Soup, bouillon cubes 3
    Oregano, ground, 2.5 tbsp
    Nutmeg, ground, 1 tsp
    Chili powder, 2 tbsp
    Gourmet House Quick Cooking Wild RIce, 2.75 oz box


Boil carcas for 1 hour. My carcas had approx 2 cups of turkey left on it.
Add onions, celery and carrots and cook for 1/2 hour
Add tomatoes, bouillon, spices and mushrooms, and cook for 1/2 hour
Add wild rice and cook for 15 - 20 minutes
Optional - Hot Sauce! To taste.

Makes approx 20 - 2 cup servings.
