Number of Servings: 4


    2 Sweet Potatoes (baked .. see directions)
    3 Cups of Kale (or any other hearty greens)
    1 can of white beans (or any other bean of your preference)
    1/2 of a chopped onion (or shallots)
    3 cloves of garlic, minced
    juice of 1/2 lemon
    rosemary to taste
    red pepper flakes to taste
    coconut oil for the pan


I always bake about 6 sweet potatoes at one time, then have them for use throughout the week. This is really yummy!


Bake sweet potatoes (with holes poked in skins) in a 400 degree over for about 45 minutes (until Tender). (These can be baked ahead of time and reheated with you're ready to cook).
About 15 minutes before potatoes are done, warm coconut and onion. Cook onion for 5 minutes, then add garlic, rosemary & red pepper. Continue cooking for 2 minutes. Add the beans and cook for 5 minute, stirring occasionally,
Add chopped kale and cover the pan. Cook for 5 minutes, stirring occasionally.
Add lemon juice over the kale plus salt and pepper.
Slit open top of the potato and press the ends to open wider.
Stuff with kale and bean mixture

Serving Size: serves 2 for main course, or four as a side dish. Also a great lunch!
