    2 zucchini
    4 small potatoes
    12 med-large mushrooms
    1/2 green pepper
    1/2 yellow pepper
    1/2 red pepper
    olive oil spray
    extra-virgin olive oil
    minced garlic


Wash and cut up all veggies into pieces (you decide how big/small)

spray baking pan with olive oil spray. Spread veggies around pan. Sprinkle with salt, pepper,
oregano and minced garlic.

Drizzle with extra-virgin olive oil

bake at 375 for 30 min or until potatoes are soft and tender
