    2.25 cups Flour, white
    2 2sp baking powder
    1 tsp pumpkin pie spice
    .25 tsp cinnamon
    0.75 cup brown sugar, packed
    6 TBSP egg sbstitute
    0.5 cup canola oil
    1cup milk, fat-free
    1cup apples, fresh, chopped


Fill empty muffin cups 1/2 full of water so as to not ruin your muffin pan.


1. Preheat oven to 400F.

2. Line standard muffin pan with paper muffin cups.

3. Combine dry ingredients in a medium-sized mixing bowl. Add wet ingredients and apples and mix well.

4. Fill muffin cups 3/4 full with batter.

5. Bake until done, about 25 minutes. Test with a toothpick - it should come out clean when muffins are done.
