Introduction

A very hearty soup for those cold days. A very hearty soup for those cold days.
Number of Servings: 6

Ingredients

    Hormel Beef Roast (17oz) package
    2 cups sliced carrots
    1/2 small bag of mixed veggies
    2 cups sliced mushrooms
    1 onion
    2 cans of Stewed Tomatoes with juice
    1 large potato diced
    2 cups beef broth
    1 Clove of garlic minced
    1 or 2 Bay Leaves
    Salt and Pepper to taste


Directions

*6 to 8 one cup servings*

Cut up carrots, mushrooms, onion, and potato. Put in a soup pot on Medium heat with salt and pepper and some cooking spray. Cook until potatoes soften.

While that's cooking set out mixed vegitables to thaw a bit and take beef out of package, (disguard au jus) and shred the meat.

When potatoes are soft add garlic, mixed vegitables, tomatoes, beef broth and bay leaf(s). Bring to a boil. Add beef and reduce heat and cover. Simmer for 30 minutes. Adjust seasonings to taste.

Can be served with crusty bread.
