Tzatziki - ninja-style

2 C (16oz) plain greek yogurt
1 lemon, juiced (seeds removed)
Black pepper, to taste
Fresh dill, at least 4 sprigs
6 cloves Garlic, peeled
The draining of the yogurt helps keep the texture from getting too watery after you add the extra liquod (ie lemon juice).
Do not put yogurt in a blender or processor if you want to keep the thick yogurt consistency. Mix tzatziki by hand!
If you want traditional tzatziki with cucumber, take one washed cucumber (peeled if you like) and slice thinly. Place in single layers on cloth or paper towel covered plate. Place another layer of paper towel on top and weigh down with another plate. Allow cloth/paper towel to remove liquid from cucumber while yogurt is draining.
Nutritional information does NOT include cucumber.
Place all remaining ingredients in food processor or magic bullet (or very finely dice dill and garlic and mix in small cup with pepper and lemon juice).
Move yogurt to a bowl and gently fold in garlic/pepper/lemon/dill mixture, until well blended.
Serving Size: Makes 8 2oz servings
