    Fool Proof Oven Brown Rice - 2C
    1 can of black beans
    1 can of low sodium corn
    1 can of red kidney beans
    2 C diced tomato
    1 C chopped carrot
    1 C chopped celery
    1/2 medium onion
    1/2 green bell pepper
    1 box of low sodium chicken broth

    Optional - seasonings
    Cumin, Mrs Dash, garlic powder, red pepper flakes


Saute veggies in 1 TBSP of olive oil.
Add remaining ingredients and bring to boil until veggies are tender. Add seasonings to taste while cooking.

Serving Size: Makes 8 - 2 cup servings
