    3 large egg whites or egg white subsitute
    1 whole egg
    2 tbsp fat-free milk
    1/4 c. diced roasted red bell pepper
    1/2 c. diced onion
    1/4 c. 2% cheddar or jack cheese
    chopped cilantro for garnish


In a small bowl, whisk together the eggs and milk. Coat a pan with PAM olive oil cooking spray. Ove medium-high heat saute the veggies. One soft, set aside. Spray pan again and pour eggs into pan, let eggs set, flip then spread veggies on top and cheese. Fold onver in half and serve.
