    6 oz cooked linguini or other pasta
    1 tsp salt
    2tbsp olive oil
    4 large eggs


Great with a salad of your choice.


Add olive oil to skillet and allow it to preheat. Add cooked linguini, letting it sizzle and form a golden "crust." Flip it over and let crust form on other side. Crack and beat eggs in a bowl, add salt, pepper, and any other spices to taste. Pour over linguini and allow to cook for about 1-2 minutes. Flip omelet over and allow other side to cook. Slide onto a serving plat and add chopped parsley or cilantro. Cut into pie-shaped pieces.
